Role Summary
As Sous Chef, you will support the Head Chef in delivering high-quality food and service while supervising the kitchen team. You’ll play a key role in menu development, food preparation, hygiene compliance, and team training. This is an excellent opportunity for a talented and ambitious chef to progress their career in a busy, well-regarded hotel kitchen.
Key Responsibilities

Supervise kitchen staff in the absence of the Head Chef

Oversee preparation, presentation, and quality control of all food in designated areas

Implement and monitor HACCP procedures, ensuring compliance and documentation

Uphold and improve high culinary standards in line with company expectations

Assist in menu planning, costing, and development of seasonal offerings

Support recruitment, onboarding, and ongoing training of kitchen staff

Create and maintain departmental SOPs and ensure consistent implementation

Delegate daily kitchen tasks effectively to maximise output and efficiency

Liaise with suppliers and manage ordering of food and stock levels

Ensure kitchen operates in compliance with health and safety regulations

Be aware of daily business levels and collaborate with other departments
Candidate Requirements

Minimum 2 years’ experience as Sous Chef or in a similar senior kitchen role, preferably in a 4-star hotel setting

HACCP trained with a strong understanding of food safety standards

Proven ability to lead and motivate a team in a high-pressure environment

Strong culinary skills and passion for quality and innovation

Professional appearance and excellent work ethic

Flexibility to work varying shifts, including evenings and weekends
