Our client, a 4-star hotel, is on the lookout for an experienced and innovative Sous Chef. This is an excellent opportunity for a culinary professional looking to take on a leadership role in the kitchen.

A Sous Chef is responsible for providing supportive leadership to kitchen staff throughout the food service process. Taking on additional obligations in the Head Chef’s absence to ensure the smooth running of the kitchen.

Responsibilities:

  • Assist the Head Chef in planning and executing menu offerings that meet company standards.
  • Be able to step up in the absence of a head chef and ensure the smooth running of the kitchen.
  • Oversee the preparation of dishes, ensuring consistency and adherence to recipes and presentation standards.
  • Supervise and train kitchen staff to ensure efficient and consistent food preparation and presentation.
  • Ensuring kitchen staff adhere to set standards, procedures, department rules and sanitation requirements.
  • Collaborate with the head chef to develop new dishes, recipes, and rotating menus.
  • Managing the kitchen inventory, ensuring supplies are fresh and of high quality, and managing food costs to meet budgetary goals.
  • Ensuring proper food temperatures when cooking and proper storage afterward.
  • Keeping the workstation and kitchen equipment clean, organized and sanitized.
  • Support the head chef in scheduling, performance evaluations, and other administrative tasks.
  • Act as a role model for kitchen staff, promoting a positive and professional work environment.

Requirements:

  • Proven experience as a Sous Chef or Senior Chef de Partie in a high-volume restaurant or catering establishment.
  • Culinary trained and professional who is passionate and curious to develop and grow as a chef.
  • Strong culinary skills with a focus on creativity, flavour, and presentation.
  • Knowledge of kitchen equipment, food safety practices, and menu development.
  • Ability to work collaboratively in a fast-paced, team-oriented environment.
  • Experienced in training and leading teams, as well as the production and preparation of large quantities of food.
  • Flexible schedule with the willingness to work evenings, weekends, and holidays as needed.
