Here at the Noel Group, we are recruiting for a Sous Chef for our client in Cavan. We are looking for an organised and creative chef to join our clients busy team. As their new Sous chef you will be responsible for the Bistro section of the beautiful venue and be second in command to the head chef here.

39 hours a week – 5 days out of 7

Responsibilities:

  • Assist the Head Chef in managing the day-to-day operations of the kitchen, ensuring smooth workflow and efficient service.
  • Supervise and participate in the preparation, cooking, and plating of dishes, ensuring they meet the restaurant’s standards for quality, taste, and presentation.
  • Collaborate with the Head Chef in creating new dishes and updating the menu based on seasonal ingredients and customer preferences. Provide input on recipe development and portion control.
  • Monitor the quality of ingredients and finished dishes to ensure consistency and excellence. Conduct regular taste tests and quality checks.
  • Train, mentor, and supervise kitchen staff, including line cooks, prep cooks, and dishwashers. Assign tasks and manage kitchen staff schedules to ensure proper coverage during all shifts.
  • Assist in managing inventory levels of food, supplies, and equipment. Coordinate with suppliers for orders and ensure timely delivery of fresh ingredients. Monitor stock levels to minimize waste and reduce costs.
  • Ensure the kitchen adheres to all health and safety regulations, including proper food handling, storage, and sanitation practices. Conduct regular inspections to maintain a clean and safe working environment.
  • Communicate effectively with the service team to manage special requests, dietary restrictions, and timing of service.
  • Lead the kitchen team in the Executive Chef’s absence, ensuring that all operations run smoothly and standards are maintained. Take charge of the kitchen during peak hours and in high-pressure situations.
  • Stay updated on culinary trends and techniques. Encourage continuous learning and development among kitchen staff.
