Our client, a well-established 4-star hotel and member of a renowned Irish hospitality group, is currently seeking a passionate and experienced Sous Chef to join their dynamic kitchen team. Role Summary
As Sous Chef, you will support the Head Chef in delivering high-quality food and service while supervising the kitchen team. You’ll play a key role in menu development, food preparation, hygiene compliance, and team training. This is an excellent opportunity for a talented and ambitious chef to progress their career in a busy, well-regarded hotel kitchen.
Key Responsibilities
- Supervise kitchen staff in the absence of the Head Chef
- Oversee preparation, presentation, and quality control of all food in designated areas
- Implement and monitor HACCP procedures, ensuring compliance and documentation
- Uphold and improve high culinary standards in line with company expectations
- Assist in menu planning, costing, and development of seasonal offerings
- Support recruitment, onboarding, and ongoing training of kitchen staff
- Create and maintain departmental SOPs and ensure consistent implementation
- Delegate daily kitchen tasks effectively to maximise output and efficiency
- Liaise with suppliers and manage ordering of food and stock levels
- Ensure kitchen operates in compliance with health and safety regulations
- Be aware of daily business levels and collaborate with other departments
Candidate Requirements
- Minimum 2 years’ experience as Sous Chef or in a similar senior kitchen role, preferably in a 4-star hotel setting
- HACCP trained with a strong understanding of food safety standards
- Proven ability to lead and motivate a team in a high-pressure environment
- Strong culinary skills and passion for quality and innovation
- Professional appearance and excellent work ethic
- Flexibility to work varying shifts, including evenings and weekends
