We are seeking an experienced and passionate Bar Manager to lead and elevate the beverage offering within a luxury 4-star hotel. The successful candidate will be responsible for overseeing all beverage operations, ensuring an exceptional guest experience while maximising profitability and maintaining high standards of quality, service, and compliance.

What You’ll Do

• Manage daily bar operations with a hands-on approach.
• Build our whiskey offering and champion local producers.
• Curate a drinks list that reflects the best of Ireland and beyond-wine, cocktails, non-alcoholic, and more.
• Oversee bar food operations, working with the kitchen to maintain consistency and quality.
• Lead and train the bar team, setting high standards and supporting development.
• Take responsibility for stock control, purchasing, and supplier relationships.
• Monitor margins, drive revenue, and ensure efficient scheduling.
• Support events, tastings, and promotions with a strong floor presence.

What You Bring

• Minimum 3 years’ experience in a bar leadership role.
• Strong knowledge of spirits, cocktails, wines, and Irish whiskey.
• Passion for Irish ingredients and local sourcing.
• Solid understanding of bar food operations.
• Ability to manage costs, stock, and team performance.
• Calm under pressure with a sharp eye for detail.
• A natural leader who motivates and develops others.
