Reports To: Head Chef

About the Role:

We at Noel Group are recruiting on behalf of a highly regarded boutique hotel and restaurant known for its modern Irish cuisine and focus on quality seasonal produce. The Sous Chef will play a key leadership role within a busy, well-structured kitchen, supporting the Head Chef in daily operations, driving consistent standards, and contributing to menu development. This is an excellent opportunity for an experienced Sous Chef or a strong Senior Chef de Partie ready to step up.

Key Responsibilities:

• Support the Head Chef in managing day-to-day kitchen operations
• Lead the team during service and ensure high-quality food output across all sections
• Assist in menu planning, seasonal dish development, and specials
• Train, mentor, and supervise junior kitchen staff
• Ensure all food safety, hygiene, and HACCP standards are strictly adhered to
• Manage stock levels, ordering, cost control, and waste reduction
• Work closely with front-of-house to maintain seamless service and guest satisfaction
• Uphold a positive and professional working environment

Key Requirements:

• Previous experience as a Sous Chef or Senior CDP in a quality hotel, restaurant, or gastro-style venue
• Strong culinary ability and passion for seasonal, locally sourced produce
• Confident leader with excellent communication and organisational skills
• Ability to perform well under pressure while maintaining high standards
• Strong knowledge of HACCP, allergens, and kitchen best practice
• Flexibility to work evenings, weekends, and peak periods
• Motivated, team-focused, and committed to continuous improvement
