Key requirements:

Manage and lead the staff in the kitchen in the absence of the Head Chef

Ensure all dishes meet the required standards and are of a high quality

Ensure that appropriate hygiene and safety rules are adhered to in the kitchen

Assist in menu planning, ordering, stock control and costing

Prepare and cook dishes to the highest standard

Monitor and control the portion size and quality of the dishes

Delegate tasks to junior staff members, providing guidance and support

Ensure all equipment is maintained and kept in perfect working order

Train and develop junior staff members to the required standards

Supervise the kitchen and dining areas to ensure they are clean and tidy

Ensure that all food items are stored correctly and in accordance with health and safety regulations

Monitor food waste and ensure it is kept to a minimum
