Key Responsibilities

  • Assist in the daily management and operation of the hotel bar, ensuring exceptional service standards at all times.
  • Lead, motivate, and support the bar team to deliver outstanding guest experiences.
  • Supervise service periods, ensuring efficient operation and strong attention to detail.
  • Assist with recruitment, onboarding, training, and development of bar staff.
  • Prepare and manage staff rosters in line with business requirements.
  • Monitor stock levels, place orders, and support effective inventory management.
  • Assist with beverage menu development, promotions, and seasonal offerings.
  • Ensure all licensing laws, HACCP procedures, health and safety standards, and company policies are adhered to.
  • Handle guest feedback and resolve service issues in a professional and timely manner.
  • Support the achievement of departmental budgets, revenue targets, and cost controls.
  • Maintain strong communication with the kitchen, restaurant, events, and wider hotel teams.
  • Conduct regular quality checks to ensure presentation, cleanliness, and service standards are maintained.
  • Assist in cash handling procedures, end-of-day reconciliations, and reporting requirements.
  • Lead by example, creating a positive and professional working environment.

Key Requirements

  • Minimum 2 years’ experience in a supervisory or assistant management role within a hotel bar, restaurant, or high-volume hospitality environment.
  • Strong leadership and team management skills.
  • Excellent customer service and communication abilities.
  • Passion for food, beverage, and delivering exceptional guest experiences.
  • Strong knowledge of wines, spirits, cocktails, and current beverage trends.
  • Experience with stock control, ordering, and cost management.
  • Good understanding of licensing legislation, HACCP, and health & safety regulations.
  • Ability to work effectively under pressure in a fast-paced environment.
  • Flexible approach to working hours, including evenings, weekends, and public holidays.
  • Excellent organisational and problem-solving skills.
  • Fluent English, both written and spoken.
  • Must have legal entitlement to work in Ireland.

Desirable

  • Previous experience within a luxury hotel or resort environment.
  • WSET qualification or equivalent beverage certification.
  • Experience using hospitality EPOS systems.
  • Knowledge of cocktail creation and beverage menu development.
