Reports To: Director of Food & Beverage / General Manager

About the Role:

Noel Group is proud to partner with a prestigious hospitality client in Westport, County Mayo, to recruit an experienced and passionate Bar Manager for an exciting new opening opportunity.

This is a fantastic chance to join a premium hotel property on Ireland’s Wild Atlantic Way. We are seeking a dynamic hospitality professional who can lead all bar operations, deliver exceptional guest experiences, and develop a high-performing team in a luxury environment.

The successful candidate will be responsible for beverage quality, service standards, financial performance, compliance, and creating a vibrant, premium bar offering across the property.

Key Responsibilities

Bar Operations & Service Excellence

  • Oversee daily bar operations across all outlets to ensure seamless, high-quality service
  • Develop and implement service standards, SOPs, and guest engagement strategies
  • Maintain exceptional standards of cleanliness, presentation, and atmosphere
  • Ensure mise en place and service readiness at all times

Beverage Programme & Product Quality

  • Support the development and delivery of a premium beverage programme including wines, cocktails, spirits, and non-alcoholic offerings
  • Collaborate with suppliers and industry specialists to create seasonal and signature menus
  • Conduct regular tastings, quality checks, and product training sessions
  • Ensure consistency and innovation across all beverage offerings

Team Leadership & Development

  • Recruit, train, and motivate bartenders, mixologists, and support staff
  • Deliver regular coaching on product knowledge, upselling, and luxury service standards
  • Foster a positive team culture focused on accountability, professionalism, and creativity
  • Manage performance through feedback, reviews, and development planning

Financial Management

  • Manage budgets, revenue targets, and bar profitability
  • Control labour costs, scheduling, and payroll in line with targets
  • Monitor stock levels, cost of goods sold, and waste reduction measures
  • Analyse sales trends and implement promotions and upselling initiatives

Compliance & Safety

  • Ensure full compliance with licensing laws, food safety, health & safety, and company policies
  • Maintain up-to-date SOPs for emergency procedures, ID checks, and intoxication management
  • Lead audits and risk assessments with senior management
  • Promote a safe and compliant working environment

Key Requirements

  • 3-5 years’ experience managing upscale, premium, or luxury bar operations
  • Strong knowledge of cocktails, wine, spirits, and premium beverage service
  • Proven leadership and team development experience
  • Strong commercial awareness with experience managing budgets and stock controls
  • Proficient in POS systems and inventory management software
  • Excellent communication, interpersonal, and guest service skills
  • Food Safety and Responsible Alcohol Service certifications preferred
  • Eligibility to work in Ireland
